3 large ripe tomatoes, sliced 1/2 inch thick
1/3 cup olive oil
1/4 cup sherry or red wine vinegar
1/4 cup finely chopped onions
2 Tables. drained capers
1 clove garlic, minced
2 Tables. chopped fresh basil
1 teasp. salt (optional)
1/4 teasp. ground pepper
2 Tables. minced fresh parsley
Recipe
In shallow dish, arrange tomatoes in single layer. In small bowl,
combine remaining ingredients, blending well. Spoon dressing over
tomatoes. Cover and refrigerate 3 hours.
Serves 4.
