    Blueberry Bread

    1/2 t. soda
    2 cups flour
    1 cup sugar
    1 1/2 t. baking powder
    1/4 t. salt
    2 T. shortening
    1 egg, beaten
    1/4 cup orange juice
    1 T. orange or lemon rind, grated
    Boiling water
    1 cup fresh or thawed frozen blueberries
    1/2 cup pecans or walnuts, chopped

    Preheat oven to 350. Grease 9 x 5" loaf pan. Mix together flour, sugar, baking powder, soda and salt. Blend in shortening. Stir in egg. Add enough boiling water to orange juice and rind to make 1 cup. Stir into flour mixture. Add
    blueberries and nuts, stir gently. Pour batter into repared pan. Bake 60 minutes. Makes 1 loaf.
