    3 cups all-purpose flour
    1 1/2 tablespoons baking powder
    3/4 teaspoon baking soda
    3/4 teaspoon salt
    2 tablespoons sugar
    3/4 cup margarine -- cold
    1 egg -- slightly beaten
    3/4 cup buttermilk
    1/2 cup shredded cheddar cheese

    Sift dry ingredients together. Cut margarine into tablespoons and blend into dry ingredients. Stir 1/2 cup buttermilk into beaten egg and add to flour mixture. Stir quickly, adding remainder of buttermilk as necessary until dough forms a ball.
    Turn onto floured surface and knead once. Mix in cheese while kneading. Let dough rest for a minute, then roll out to 3/4" thickness. Cut into 2" rounds. Place biscuits on buttered baking sheet, 1" apart. Bake at 400F for 15 minutes or until golden brown.

    Tips to Ponder

    To test the quality of baking powder, put a teaspoon in one cup of hot water. If it bubbles a lot, it's good; if it doesn't, throw it out.

    Leave a chopstick in the flour canister so you can level off measuring cups without reaching for-and washing-a knife.
