    Chocolate Zucchini Cake

    Recipe Introduction


    Some people like to add cocoa to the dry ingredients, but I haven't, so I don't know how much to add--my guess would be 4 teaspoons.


    List of Ingredients


    • 1/3 cup boiling water
    • 2 cups finely chopped zucchini
    • 2 cups all-purpose flour
    • 1 1/4 cups sugar
    • 1 1/4 teaspoons baking soda
    • 1 teaspoon salt
    • 1/2 cup vegetable oil
    • 3 eggs
    • 1 teaspoon vanilla
    • 1 cup chocolate chips
    • 1 cup chopped nuts (optional)


    Instructions


    1. Pour boiling water on zucchini.
    2. Heat oven to 350 degrees.
    3. Grease and flour 9x13 inch pan.
    4. Beat zucchini in water and remaining ingredients except chocolate chips on low speed, scraping bowl constantly for 1 minute.
    5. Then beat on medium speed scraping bowl occasionally for 2 minutes.
    6. Stir in chocolate chips with a spoon.
    7. Pour into pan.
    8. Bake until toothpick comes out clean when inserted in center of cake (approx. 45 to 50 minutes).
    9. Let cool, then frost with Chocolate Frosting.


    Final Comments


    Chocolate Frosting for Chocolate Zucchini Cake
    1/2 cup margarine or butter, softened
    4 1/2 cups powdered sugar
    4 to 5 tablespoons cocoa
    2 teaspoon vanilla
    *milk - depending on desired consistency
    Mix margarine, powdered sugar and cocoa.
    Beat in vanilla.


    *You may want less vanilla and more milk--it all depends on taste. Add milk until you get the desired consistency...this could be anything from a couple of drops to a couple of teaspoons.
