    Red Kidney Beans Curry

    List of Ingredients

    1 small cup red kidney beans
    2 Tbs ghee (clarified butter)
    salt to taste
    1 tsp red chilli powder

    Grind to paste the following
    1 large onion
    2 large tomatoe
    1/2 inch ginger
    5-7 cloves garlic
    2 green chillies

    Recipe

    Soak the red kidney beans overnight in water. Drain. Pressure cook them in adequate quantity of fresh water for 20 minutes or until soft. If you're not using a pressure cooker, it might take up to 1 hour for the beans to get soft. Heat ghee, fry the paste for 1-2 minutes. Add chilli powder. Add the cooked red kidney beans along with its water. Add salt and let it simmer for 5-7 minutes.

    Tastes great with plain rice.
