    Tomato-Basil Drop Buscuits

    List of Ingredients

    1/2 cup finely chopped green onions
    1 Tbs olive or vegetable oil
    3/4 cup chopped fresh tomato, drained
    1/4 cup minced fresh basil OR 4 tsp. dried basil
    2 cup flour
    1 Tbs baking powder
    1 tsp salt
    1/4 tsp coarsely ground black pepper
    1/3 cup shortening
    2/3 cup milk

    Recipe

    Preheat oven to 425 degrees. Grease baking sheets.

    In a small skillet, saute onion in oil until tender. Add tomato, cook 1 minute longer. Remove from the heat, stir in basil. Cool slightly. In a bowl, combine the next 4 ingredients. Cut in shortening until the mixture resemble coarse crumbs. Stir in milk and tomato mixture just until combined.
    Drop by teaspoonfuls 2 in. apart onto baking sheets. Bake at for 10-12 minutes or until golden brown. Remove to wire racks. Serve warm.

    Makes 1 1/2 dozen
