    Zucchini Spoon Bread

    List of Ingredients




    1 cup fresh or frozen whole kernel corn
    1/2 cup chopped onion (1 medium)
    1/2 cup green sweet pepper strips (1 medium)
    1/2 cup water
    1 cup chopped zucchini
    1 cup chopped tomato (2 small)
    1 cup shredded cheddar cheese (4 ounces)
    1/2 cup cornmeal
    2 eggs
    1/2 cup milk
    1/2 tsp salt
    1/4 tsp pepper
    Several dashes bottled hot pepper sauce

    Recipe



    Preheat oven to 350 degrees.

    In a large saucepan combine corn, onion, pepper strips, and water. Bring to boiling; reduce heat. Cover and simmer for 5 minutes. Do not drain. Stir in zucchini, tomatoes, cheese, and cornmeal. Set aside.

    In a small mixing bowl beat eggs slightly; stir in milk, salt, pepper, and hot pepper sauce. Stir egg mixture into the vegetable mixture in the saucepan. Turn the mixture into a greased 1-1/2-quart casserole. Bake, uncovered about 40 minutes or until set. Let stand for 5 minutes.

    Makes 6 servings.
