    Carrot Cake with Cream Cheese Frosting

    3/4 cup oil
    4 eggs
    2 cups sugar
    2 cups flour
    2 tsp baking powder
    1 1/2 tsp baking soda
    2 tsp cinnamon
    1 tsp salt
    2 cups grated carrots
    1 cup crushed pineapple with juice

    Recipe



    Preheat oven to 350 degrees. Butter a 9x13 pan, then cut
    a piece of parchment paper to line the bottom of
    the pan.

    Mix oil, sugar and eggs together. Beat well. Add
    dry ingredients and mix well. Stir in carrots and
    pineapple with juice. Pour in cake batter and bake
    for 45-50 minutes. Cool pan on rack and turn over
    onto a cookie sheet that has been lined with doilies
    or plastic wrap, or both. Peel the parchment paper
    carefully off the cake bottom.

    Cream Cheese Frosting

    1 pound box confectioners' sugar
    1 stick butter
    1 tsp vanilla
    8 ounces cream cheese softened

    Cream together butter and cream cheese.
    Add vanilla and sugar gradually until
    creamy.
