    Healthy Oatmeal Cookies

    2 cups barley flour or whole wheat flour
    2 cups raw rolled oats
    3/4 cup chopped walnuts or pecans
    1 tsp sea salt
    1/2 cup date sugar
    1 cup raisins
    1/2 cup mild flavored olive oil
    1/2 cup pure maple syrup or honey
    1 tbs vanilla
    1/2 cup water

    Preheat oven to 350 degrees.
    Mix dry ingredients together in one bowl and blend liquid
    ingredients in another bowl. Combine liquid and dry
    ingredients and mix. Spray cookie sheets with PAM or
    olive oil. Drop cookie dough by spoonsful and shape into
    desired form. Bake for 15 to 20 minutes.
