    Indian-Spiced Shrimp on Coconut Rice

    1/2 cup water
    1 (14 oz) jar light coconut milk
    1 (8 oz) can pineapple tidbits or crushed pineapple, drained, juice reserved
    1 1/2 tsp salt, divided
    1 cup uncooked long grain white rice
    1 Tbs garam masala
    1 tsp pepper
    1 1/2 lbs shrimp, peeled and deveined
    2 Tbs olive oil
    1/2 cup plus 2 Tbs chopped green onions, divided
    (try adding 1 cup snow peas)

    Bring water, coconut milk, 1/4 cup reserved pineapple juice, and 2/3 tsp salt to a boil in a medium saucepan over medium-high heat. Stir rice, cover and reduce heat to simmer. Cook 15 minutes, or until liquid is absorbed. Stir in pineapple and 1/2 cup green onions. Meanwhile, in large bowl, combine remaining 1 tsp salt, garam masala and pepper. Add shrimp and stir to coat with spice mixture. Heat oil in large skillet over medium-high heat. Add shrimp and saute' just until cooked through, about 4-5 minutes. Spoon rice onto platter, top with shrimp and remaining 2 Tbs green onions.
