    Carbonnade

    List of Ingredients

    3 pounds beef stew meat
    1 1/2 Tbs olive oil
    1 1/2 Tbs butter
    3 medium onions, sliced
    2 Tbs cider vinegar
    2 tsp brown sugar
    1 1/2 cups beer (full-flavored, like Stout)
    3 cups beef broth
    2 bay leaves
    1/2 teaspoon thyme

    Serve over cooked noodles

    Recipe

    In a deep, heavy pan (that has a lid and can go into the
    oven), heat the oil and butter. Add the beef and brown.
    Remove with a slotted spoon. Add the onions and cook until
    soft. Add the remaining ingredients. Return the beef. Cover
    and place in a pre-heated 325 oven. Cook for 1 3/4 hours or
    until the beef is very tender.

    Serves 4-6
