    Pork Loin with Cherry Almond Sauce

    List of Ingredients





    1 boned, tied pork loin roast, 4-6 lbs
    One 12 oz jar cherry preserves
    1/4 cup light corn syrup
    1/4 cup red wine vinegar
    1/4 tsp salt
    1/4 tsp grated nutmeg
    1/4 tsp ground cloves
    1/4 tsp cinnamon
    1/8 tsp pepper
    1/4 cup slivered blanched almonds

    Recipe



    Preheat oven to 325 degrees. Put the pork on a rack in a shallow roasting pan. Place in the oven & roast uncovered about 3 hours.

    Meanwhile, combine the cherry preserves, corn syrup, vinegar, salt & spices. Bring to a boil for 1 minute. Add the almonds. Baste the meat with the sauce several times during the last 30 minutes of roasting time. Serve the remaining sauce with the meat.

    Serves 8.
