    Spicy Orange Pot Roast

    List of Ingredients




    1 3 to 4lb beef pot roast
    1/2 cup orange juice
    1/4 cup brown sugar
    1 orange peeled and sliced
    2 Tbs oil
    2 Tbs cornstarch
    1 Tbs flour
    1 tsp salt
    1 tsp paprika
    1 tsp ground cayenne
    1 tsp grated orange peel
    1/2 tsp ground nutmeg
    1/4 tsp dried thyme leaves, crushed
    1/4 tsp black pepper
    1/4 tsp oregano

    Recipe



    Coat roast with mixture of flour, paprika, ground cayenne, oregano, salt and pepper.
    In large skillet, brown the meat on all sides in hot oil. (Electric skillet 350) Pour off excess fat. Combine Shortening, orange peel,orange juice,brown sugar, nutme,. pour over meat. Cover. Reduce heat to 220. Simmer till meat is tender, 2 to 2 1/2 hours. Add water if necessary. Cut orange slices in half, add to skillet. Cover, just enough to heat oranges, about 5 minutes. Remove roast to platter, keep warm. Blend cornstarch and 2 Tbs cold water, stir into pan juices. Cook and stir until thickened. Serve with roast.

    Serves 6 to 8.
