Sesame Turkey Nuggets

2 Tbs soy sauce
1 Tbs vegetable oil
2 tsp minced garlic
1 tsp grated fresh ginger
1-1/2 lbs turkey tenderloins, cut in 1-1/2-inch chunks
1 Tbs cornstarch
1 2.6-ounce jar sesame seeds
2 Tbs vegetable oil
1 12-ounce jar pineapple preserves
2 Tbs soy sauce
1/2 tsp red pepper flakes (optional)
1 tsp distilled white vinegar
Cooked rice
Combine the 2 Tbs soy sauce, 1 Tbs oil, garlic and ginger in large bowl. Add turkey; toss to coat. Cover, marinate in refrigerator for 20 minutes to 24 hours. Stir cornstarch into turkey mixture until well blended; sprinkle with sesame seeds, turning to coat all sides. Heat the remaining 2 Tbs oil in a 12-inch non-stick skillet over medium-high heat. Add turkey and cook 11 to 13 minutes, turning as it browns, until golden and cooked through.
Meanwhile, for dipping sauce combine preserves, 2 Tbs soy sauce, and pepper flakes, if desired, in microwaveproof bowl. Microwave on High 2 minutes, until preserves are melted; stir in vinegar. Serve with sauce and rice.
