    Brown Rice Tabbouleh

    3 cups cooked brown rice
    3/4 cup chopped cucumber
    3/4 cup chopped tomato
    1/2 cup chopped fresh parsley
    1/4 cup chopped fresh mint leaves
    1/4 cup sliced green onions
    1/4 cup olive oil
    1/4 cup lemon juice
    1/2 tsp salt
    1/4 tsp freshly ground black pepper

    Combine all ingredients in a large bowl and toss well. Serve chilled.
