Confetti Rice Pilaf

2 tsp olive oil
1/2 cup diced yellow onion, optional
1/2 cup diced carrots
1/2 cup diced zucchini
1/2 cup diced yellow squash
1 clove garlic, minced
3 cups cooked brown rice (cooked in low-sodium broth)
1/4 tsp minced fresh rosemary leaves, or favorite herb.
Heat oil in large skillet over medium heat. Add onion, carrot, zucchini, squash and garlic, cook until vegetables are tender crisp. Stirr in rice, pepper and rosemary. Cook until heated through.
