Feta Vegetable Rice

1 Tbs olive oil
1 medium red onion, halved and thinly sliced
2 cups very thinly sliced carrots
28 oz can diced tomatoes
20 pitted black olives, sliced
1/2 tsp ground cumin
Salt and pepper to taste
4 cups hot cooked rice
1 cup crumbled feta cheese
Sautee onions and carrots in olive oil in a large skillet, until onion is softened, about 6 minutes. Add remaining ingredients, except rice, and continue cooking about 10 minutes or until carrots are softened. Serve over hot rice. Sprinkle with Feta cheese.
