Rice Pilaf

1/4 cup butter
3/4 cup chopped onion
1 cup chopped celery
1 cup long grain rice--uncooked
1 envelope Lipton chicken rice soup mix
2 1/2 cups water
1 teaspoon poultry seasoning
3/4 teaspoon salt
1/8 teaspoon pepper
Melt butter in large frying pan; add rice, celery and onion.
Saute until rice is golden brown. Add soup mix, water and
seasonings. Cover tightly and simmer for 25 minutes or
until liquid is absorbed and rice is tender.
