Savory Brown Rice
List of Ingredients
1 cup brown rice (can use white)
1 Tbs oil
1/2 cup finely chopped yellow onion
1 tsp. caraway seeds (optional)
1 cinnamon stick
1 cup chicken stock
1 1/2 cups water
Recipe
Rinse brown rice well. In a 2-3 quart saucepan, heat oil over medium-high heat. Add onions, caraway and cinnamon stick. Saute, stirring frequently, until onions are soft, about 3 minutes. Stir in the rice and saute for an additional minute. Add chicken stock and water, bring mixture to a boil. Reduce heat and simmer, covered, 30 to 40 minutes, or until rice is tender and liquid is absorbed. (white rice will get tender sooner). Fluff rice with fork, remove cinnamon stick and serve immediately.
