    Tomato & Spinach Rice

    List of Ingredients




    2 Tablespoons Olive oil
    1/4 cup Parsley, chopped
    1 medium Onion, diced
    2 teaspoons Garlic, minced
    3 cups Water
    1 cup Tomatoes, diced
    4 ounces Spinach, frozen, chopped
    1 cup Rice
    Salt & pepper to taste

    Recipe



    In a heavy saucepan, add the oil, onion, and garlic. Cook
    until just soft. Add the parsley and cook two minutes. Add
    the water, tomatoes, and spinach. Bring to a boil. Add the
    rice and reduce the heat. Cover and simmer about 20 minutes
    or until the rice is soft.

    This side dish goes well with chicken or fish.

    Serves 4
