Deviled Eggs

12 large hard-cooked eggs
1/3 cup sour cream
1/4 cup mayonnaise
2 Tbs finely chopped onion
2 tsp chopped fresh cilantro
1 tsp chopped chipotle in adobo sauce
1 tsp adobo sauce only (or 1/2 teaspoon red pepper sauce)
1/2 tsp salt
Fresh cilantro sprigs for garnish
Halve eggs. Remove yolks with a small spoon and transfer to medium bowl. Lightly mash yolks. Stir in remaining ingredients. Garnish tops with fresh cilantro sprigs, if desired.
Makes 24 halves
