Beef and Barley Stuffed Peppers

3 peppers, halved and seeded
1 lb. ground beef
1/3 cup sliced green onion
1 cup cooked barley
1 cup chunky salsa
1/3 cup shredded carrot
1/4 tsp. ground cumin
3/4 cup shredded Monterey Jack cheese
Recipe
Boil peppers in salted water 3-5 minutes. Drain.
Cook beef and onion until brown. Drain.
Add barley, salsa, carrot and cumin.
Add 1/2 cup cheese.
Spoon into pepper halves.
Arrange in a 13x9-inch pan.
Microwave covered, vented 5-6 minutes.
Top with remaining cheese.
