Easy Tortellini Soup
Source of Recipe
Mel
Recipe Introduction
This is easy and delicious. You can use chicken or beef broth. I prefer chicken to beef. I use my immersion blender a little bit on the stewed tomatoes because I don't like big chunks of tomato in my soup. I like to add a pinch of red pepper flakes to perk it up a bit.
I imagine Italian sausage would be terrific in this soup if you're a meat lover. You have to try this soup. It's terrific.
List of Ingredients
2 (15 ounce) cans Italian style stewed tomatoes (cut up)
1 (48 ounce) can of chicken broth
1 (9 ounce) bag of fresh baby spinach (I cut it up with my kitchen shears)
1 pound of frozen cheese tortellini
1 (8 ounce) block of cream cheese cut into cubes to facilitate melting.
Recipe
Bring stewed tomatoes and broth to boil.
Add spinach and tortellini.
Simmer for the amount of time it takes for your tortellini to cook per package instructions.
Add cream cheese and stir gently until melted into soup.
Serve in bowls with crusty bread on the side.
