Yumm.. Tastes just like an eclair. Best if made a day in advance. For topping, you can use your favorite canned chocolate icing and just heat it in the microwave to make it easy to spread over the graham crackers.
Freezes well.
List of Ingredients
Filling:
2(3-ounce) pkgs. instant French vanilla pudding
3 Cups milk
1 (8-ounce) container Cool Whip®, thawed
Crust:
1 (16 ounce) box graham crackers
Topping:
2 ounces unsweetened chocolate
3 Tb. butter
2 Tb. white corn syrup
3 Tb. milk
1 1/2 Cups powdered sugar; sifted
Recipe
Mix vanilla pudding and milk until thickened.
Add whipped topping.
Line a 9x13 in. pan with whole graham crackers.
Pour half of the filling over crackers.
Cover filling with another layer of whole graham crackers. Add remaining pudding mixture.
Add another layer of whole graham crackers over pudding.
Topping:
Melt chocolate and butter. Add syrup and milk. Mix in powdered sugar. Pour and spread topping over graham crackers.
Refrigerate
Note: MUST BE MADE AHEAD!! Make early in the morning if you plan on serving that evening. The secret is setting several hours in the refrigerator. Try to make this the day before serving.
