    Honey Nut Oat Biscotti

    I was surfing the 'net' one day and found this recipe. These cookies are perfect dusted with a little powdered sugar. I use an electric knife to slice the cookies.

    List of Ingredients

    2 1/2 cups All Purpose Flour

    1 cup Quick Oats

    1 cup Pecan Pieces, lightly toasted

    2/3 cup Brown Sugar, packed

    1/2 cup Butter or Margarine, softened

    1/2 cup Honey

    2 eggs

    2 tsp. Vanilla Extract

    2 tsp. Ground Cinnamon

    1 tsp. Baking Powder

    1/4 tsp. Salt

    1/4 tsp. Baking Soda

    Recipe

    In a bowl, beat the sugar, butter, honey and vanilla.

    Beat in the eggs, 1 at a time until fluffy.

    In a separate bowl, combine the flour, oats, pecans, cinnamon, salt, baking soda and powder.

    Stir the flour mixture into the butter mixture until combined.

    On a large greased baking sheet (or on parchment paper) spoon the batter into two 10-inch x 2-inch logs, smoothing the surface with floured (or moistened) fingers.

    Bake at 350F for 30 minutes or until lightly brown.

    Remove from the oven and cool on the pan for 5 minutes.

    Transfer the logs to a cutting board and cut into diagonal 1/2" thick slices.

    Stand those slices up on the baking sheet, slightly apart.

    Reduce the heat to 325F and bake for another 25 to 30 minutes or until golden and almost firm to the touch.

    When cool.. dust with powdered sugar (optional).
