List of Ingredients
2 medium onions, chopped
2 carrots, diced
3 celery stalks chopped
6 mild (or hot)Italian sausages, skinned
1 medium zucchini, chopped
12 cups chicken broth
1 cup spaghetti, broken in 1-inch pieces (or your favorite small pasta shape)
1 teaspoon dried oregano
1 large can (at least 28 ounces) tomatoes, peeled, crushed in juice
1 can (15 ounces) kidney beans
salt and pepper to taste
Recipe
In a saucepan, mix onion, carrot, celery and crumbled sausage.
Cook on medium-high, stirring with wooden spoon 5 to 10 minutes until sausage browns.
Add zucchini, broth, spaghetti, oregano, kidney beans and tomatoes with juices.
Stir lightly.
Bring to boiling on high.
Reduce heat. Simmer uncovered, 30 minutes until pasta and vegetables are tender.
Stir occasionally.
Cool to refrigerate.
