    Norwegian Stuffed Chicken Breasts

    List of Ingredients


    3 chicken breasts split
    1 pkg.(10 oz.) chopped spinach
    1 1/2 cups shredded Jarlsberg cheese
    1/2 cup fresh bread crumbs
    1/2 cup shredded carrot
    1/2 cup sliced green onion
    1/4 cup parsley
    2 TB. fresh dill
    1/2 tsp. salt
    1/8 tsp. pepper
    1 egg, beaten well.

    Recipe

    Mix above ingredients.
    Stuff chicken between skin and meat.
    Baste chicken with:
    1/4 cup melted butter mixed with
    2 TB. fresh lemon juice and
    2 TB. freshly chopped parsley
    Bake 375F 1 hour and 15 minutes.

    Serve with cheese sauce if desired.

    Sauce:
    Make regular medium white sauce
    Add 1 cup shredded Jarlsberg cheese and
    1 TB. freshly chopped dill

    Medium White Sauce:
    Makes 2 cups

    4 tablespoons butter, margarine, or drippings
    4 tablespoons flour
    2 cups milk
    1/2 teaspoon salt
    1/4 teaspoon white pepper

    Melt fat in saucepan. Stir in flour until smooth. Slowly add milk and heat stirring constantly until thickened and smooth. Add seasonings, then let mellow about 5 minutes, stirring occasionally over lowest heat.
