    Here are many spice and herb mixes you can make yourself. EMERIL'S "ESSENCE" CREOLE SEASONING (a/k/a BAYOU BLAST)

    2-1/2 tablespoons paprika
    2 tablespoons salt
    2 tablespoons garlic powder
    1 tablespoon black pepper
    1 tablespoon onion powder
    1 tablespoon cayenne pepper
    1 tablespoon dried oregano
    1 tablespoon dried thyme

    Combine all ingredients and store in an air-tight container

    EMERIL'S SOUTHWEST SEASONING

    2 tablespoons chili powder
    2 teaspoons ground cumin
    2 tablespoons paprika
    1 teaspoon black pepper
    1 tablespoon ground coriander
    1 teaspoon cayenne pepper
    1 tablespoon garlic powder
    1 teaspoon crushed red pepper
    1 tablespoon salt
    1 tablespoon dried oregano

    Combine all ingredients and store in an air-tight container

    EMERIL'S RUSTIC RUB

    8 tablespoons paprika
    3 tablespoons cayenne
    5 tablespoons freshly ground black pepper
    6 tablespoons garlic powder
    3 tablespoons onion powder
    6 tablespoons salt
    2-1/2 tablespoons dried oregano
    2-1/2 tablespoons dried thyme

    Combine all ingredients and store in an air-tight container

    HERB GARLIC BLEND

    4 tablespoons minced basil, tarragon and chervil
    5 tablespoons minced thyme
    2 garlic cloves, minced or crushed

    TACO SEASONING

    1/8 cup salt (you can leave this out)
    1/4 cup chili powder
    1 tablespoon dried oregano
    2 tablespoons crushed dried red pepper
    2 tablespoons ground cumin

    Combine all ingredients and store in an air-tight container

    MEXICAN SEASONING

    2 tablespoons paprika
    2 teaspoons finely crushed dried oregano
    1 teaspoon ground cumin
    1 teaspoon ground turmeric
    1 teaspoon garlic powder
    1/4 teaspoon cayenne pepper

    Combine all ingredients and store in an air-tight container

    ITALIAN SEASONING

    1/3 cup dried crushed oregano
    1/3 cup dried basil
    2 tablespoon rosemary
    1/4 cup thyme
    optional:
    1 tablespoon garlic powder
    1/4 dried onion flakes

    Combine all ingredients and store in an air-tight container



    BEEF OR CHICKEN SPICE BLEND

    3/4 tsp. marjoram
    1/2 tsp. thyme
    1/2 tsp. oregano
    1/2 tsp. sage
    1/2 tsp. rosemary

    Combine all ingredients and store in an air-tight container



    HERB AND SPICE BLENDS

    (Makes 1/3 cup of each blend)

    For Beef: Mix 1 tablespoon coarsely ground black pepper, 1 tablespoon
    red pepper flakes, 2-1/2 tablespoons garlic powder and 1 tablespoon
    dried minced onions.

    For Fish: Mix 2 tablespoons dried dill weed, 2 tablespoons crumbled bay
    leaves and 2 tablespoons freeze-dried chives.

    For Fruit Pie, Spice Cakes and Cookies: Mix 2 tablespoons ground
    cinnamon, 1 tablespoon ground nutmeg, 1 tablespoon ground mace, 1
    tablespoon ground allspice, 2 teaspoons ground cloves and 2 teaspoons
    ground cardamom.

    For Vegetables: Mix 2 tablespoons dried thyme, 2 tablespoons dried
    oregano and 2 tablespoons dried basil.

    For Chicken: Mix 2 tablespoons curry powder, 2 tablespoons paprika and
    2 tablespoons dried lemon rind.

    For Tomato Sauce: Mix 2 tablespoons crumbled basil, 2 tablespoons dried
    minced onions, 1 tablespoon red pepper flakes and 1 tablespoon crumbled
    dried oregano.

    For Lamb: Mix 1-1/2 tablespoons dried marjoram, 1 tablespoon crumbled
    dried rosemary, 1 tablespoon white pepper and 2 tablespoons garlic
    powder.

    Combine all ingredients and store in an air-tight container



    HERB MEAT & POULTRY SEASONING BLEND

    3/4 teaspoon marjoram
    1/2 teaspoon thyme
    1/2 teaspoon oregano
    1/2 teaspoon sage
    1/2 teaspoon rosemary

    Combine all ingredients and store in an air-tight container



    CHICKEN SEASONING MI

    2 tablespoons salt
    1 teaspoon black pepper
    1 teaspoon white pepper
    1/2 teaspoon red pepper
    1 teaspoon garlic powder
    2 teaspoons onion powder
    1/4 teaspoon ground bay leaves
    3/4 teaspoon basil
    1/2 teaspoon paprika
    2 tablespoons poultry seasoning

    Combine all ingredients and store in an air-tight container



    GREEK SEASONING BLEND:

    2 teaspoons salt
    2 teaspoons dried Italian oregano
    1-1/2 teaspoons onion powder
    1-1/2 teaspoons garlic powder
    1 teaspoon cornstarch
    1 teaspoon pepper
    1 teaspoon beef bouillon granules
    1 teaspoon dried parsley flakes
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg

    Combine all ingredients and store in an air-tight container

    NOTE: I add about 12 teaspoons of dried Greek Oregano instead of the 2
    teaspoons of Italian oregano. I use this for roasting lamb and add a
    dash to casseroles and Greek style chicken. Yummy!!



    SEASONING SALT

    1 cup pickling salt
    2-1/2 teaspoons paprika
    2 teaspoons dry mustard
    1-1/2 teaspoons dried oregano -- crushed
    1-1/2 teaspoons garlic powder
    1 teaspoon dried thyme -- crushed
    1 teaspoon curry powder
    1/2 teaspoon onion powder
    1/4 Teaspoon dried dill weed

    Combine all ingredients and store in an air-tight container.



    PUMPKIN PIE SPICE

    3 tablespoons ground cinnamon
    1-1/2 teaspoons ground ginger
    1 teaspoon ground nutmeg
    1 teaspoon ground allspice
    1/2 to 1 teaspoon ground mace
    1/4 teaspoon ground cloves

    Combine all ingredients. Store in a small jar with a tight-fitting
    cover.



    APPLE PIE SPICE

    8 teaspoons ground cinnamon
    4 teaspoons ground nutmeg
    2 teaspoons ground allspice
    1 teaspoon ground cloves or ginger

    Combine all ingredients. Store in a small jar with a tight-fitting
    cover.



    BAY SEAFOOD SEASONING BLEND

    1 tablespoon ground bay leaves
    2-1/2 teaspoons celery salt
    1-1/2 teaspoons dry mustard
    1-1/2 teaspoons black pepper
    3/4 teaspoon ground nutmeg
    1/2 teaspoon ground cloves
    1/2 teaspoon ground ginger
    1/2 teaspoon paprika
    1/2 teaspoon red pepper
    1/4 teaspoon ground mace
    1/4 teaspoon ground cardamom

    Combine all ingredients. Store in a small jar with a tight-fitting
    cover.



    CHILI POWDER

    3/4 cup crushed hot red pepper flakes
    1/4 cup ground cumin
    2 tablespoons garlic powder
    1 tablespoon oregano
    1 tablespoon cayenne or more to taste

    Put all ingredients in blender and whirl until powdered; let chili
    powder settle before carefully removing cover of blender. Store in a
    small jar with a tight-fitting cover.



    CHILI SEASONING MIX

    1 tablespoon unbleached flour
    2 tablespoons instant minced onion
    1-1/2 teaspoons chili powder
    1 teaspoon seasoned salt
    1/2 teaspoon crushed dried red pepper
    1/2 teaspoon instant minced garlic
    1/2 teaspoon granulated sugar
    1/2 teaspoon ground cumin

    Combine all ingredients. Store in a small jar with a tight-fitting
    cover.



    CHINESE FIVE-SPICE POWDER

    2 tablespoons whole black peppercorns
    36 whole cloves
    1 stick cinnamon(12 inches)
    2 tablespoons fennel seed
    12 whole star anise

    Put spices together into a blender and pulverize into a powder. Store
    in a cool place in an air-tight container.
