    Spinach Parmesan Rice Bake

    List of Ingredients




    2 packages (10-ounce)frozen spinach, cooked,and hand squeezed to remove excess moisture
    2 cups cooked white rice or brown rice
    1/2 cup melted butter
    1 1/2-2 cups shredded cheddar cheese or swiss cheese
    3/4 cup grated parmesan cheese, to taste
    1/4 cup chopped onions
    1 tablespoon chopped fresh garlic, to taste(optional)
    3 eggs, beaten
    3/4 cup milk or half-and-half cream
    1/4 teaspoon cayenne pepper, to taste (optional)
    salt and black pepper
    1/4 cup grated parmesan cheese, for topping

    Recipe



    Set oven to 350 degrees.
    Grease a 13 x 9-inch baking dish.
    Microwave or cook the frozen spinach for 5-7 minutes; drain well, squeeze out any excess moisture by hand.
    In a large bowl, combine all ingredients with a wooden spoon (adding more spices to suit taste).
    Transfer the mixture to the prepared baking dish.
    Sprinkle with Parmesan cheese.
    Bake, uncovered OR covered for 25 minutes, or until set (overbaking of this casserole, causes a heavier texture, if you prefer a lighter-textured casserole, then bake JUST until set).

    Note: for a more fluffier texture casserole, 4 eggs may be used.
