    Dutch Apple Upside-down Cake

    Recipe Introduction


    This is a great coffee cake or dessert you will be proud to serve most guests. The aroma will fill any house with a warm welcome. It is best cooked in a cast iron skillett.


    List of Ingredients


    • 4 Apples-peeled, cored and cut in chuncks
    • 2 Eggs, lightly beaten
    • 1/2 cup Butter, melted and cooled
    • 1 1/2 cup Flour
    • 1 teas Vanilla
    • 1 1/2 cup Sugar
    • 3 Tblsp Cinnamon, ground
    • 1 Skillett, Cast Iron 8" and warmed


    Instructions


    1. Heat oven to 375 F. Either use a spray grease or use shortning and coat the inside of the fry pan.

    2. Prepare the apples by peeling, coring and slicing into chunks.

    3. Mix 1/2 cup sugar and half of the cinnamon and toss the apples with it. Hold the remaining (if any) to the end.

    4. Place these in the bottom of the greased skillett.

    5. Prepare the other ingredients in a large bowl. Start with the liquid ingredients, then add the sugar, remaining cinnamon and flour.

    6. Fold all of these together and pour over the apples in the skillett.

    7. Drizzle the remaining sugar/cinnamon coating on the top of the batter.

    8. Place the completed skillett into the oven for 45 minutes.

    9. Remove skillett and run knife around edge to ensure release of cake.

    10. Invert skillett over plate to release. Allow it to rest for a few moments before serving.

    11. It could be served hot with ice cream on top (your choice of flavors), or cooled for coffee cake.



    Final Comments


    I hope you find it as appealing to the eyes as my guests have. There is other ways to modify this recipe; adding raisins, pineapple, cherry and/or other fruits.
