    My fraternal grandmother used to make these. My mother, sister and I called them Pizza Things and the name stuck. They make great appetizers and you can make them as big or little as you like and as hot as you like, too! I think I use about 4 links of Italian sausage when I make these. I remove the casings and use a potato masher (the zigzag wire kind) to crumble the sausage while it is cooking in the skillet. I also do this to crumble chopped meat. I find it easier to cut the dough in eighths (or fourths) and then add the crumbled sausage and it is easier to roll up when the sausage is crumbled in small pieces. Everyone loves these! I make up a couple of batches to keep in the freezer for the holidays. They are great reheated, too. By Barb

    Dough
    1 pkg. yeast
    2 Tbs. warm water
    pinch sugar
    1 C warm water
    3 - 4 C flour
    1-1/2 tsp. salt
    2 Tbs. oil
    Topping
    oil
    oregano
    hot pepper flakes
    about 4 Italian sausage, cooked and crumbled

    Proof yeast by mixing yeast with water and pinch of sugar. Mix together with small whisk until smooth. Let sit for 5 minutes until it becomes foamy.
    Mix proofed yeast with 1 cup warm water; set aside.
    In food processor work bowl mix together flour and salt. Add oil and pulse to mix.
    With food processor running, slowly pour yeast mixture into flour mixture. Continue mixing and kneading until a dough is formed and cleans side of work bowl. Add more flour as needed.
    Place in oiled bowl, greased side up and cover. Let rise about 1 hour.
    Meanwhile, remove sausage from casings and brown in skillet. Crumble in very small pieces as it cooks. Drain well. (I also rinse under very hot tap water to remove as much fat as possible.)
    Cut raised dough into four pieces. Roll out each piece into a thin round.
    Brush dough with oil and sprinkle with oregano and red pepper flakes to taste.
    Sprinkle with cooked and crumbled sausage.
    Cut dough in eighths (or quarters, according to size preference).
    Roll each triangle into crescent shape and place on greased cookie sheet so seam will not open while baking.
    Brush each crescent with oil.
    Bake at about 400ºF until golden brown, about 15 to 20 minutes or so.
    Note: To prepare ahead, bake only until just before turning brown. Cool and refrigerate or freeze. These are wonderful to prepare ahead of time for the holidays or a party.
