    BETH'S OLIVE-N'-CHEESE

    I don't remember Beth's last name, but she worked in the Clerk's office and made this for a party. It is Dawnie's favorite and I used to make one for her to take home. I don't use quite that much blue cheese - taste it.


    List of Ingredients


    • 8 oz. cream cheese, softened
    • 8 oz. blue cheese-crumbled (use less to taste)
    • 1/4 cup butter
    • 2/3 cup well-drained chopped ripe olives (4 1/2 oz. can)
    • 1 Tbs. minced chives
    • 1/3 cup walnuts or toasted diced almonds


    Instructions


    1. Blend cheeses and blutter.
    2. Stir inolives and chives.
    3. Chill slightly for easier shaping.
    4. Form in ball on serving dish.
    5. Chill thoroughly.
    6. Just before serving, sprinkle nuts over ball.
    7. Serve with assorted crackers.
