    Basic Quick Bread Recipe

    Source of Recipe

Shared by Star on TOH - Blueberry Hot Bread From Recipezaar

    Recipe Introduction

This recipe has turned out to be a great basic quickbread or muffin recipe - adaptable to whatever fruit you have on hand. Fabulous warm out of the oven, room temp, or even cold!

    List of Ingredients

2 loaf pans (or two 9-inch cake pans, greased and floured

    2 eggs
1 cup granulated sugar (I add a half cup of brown sugar also)
    1 cup milk
    1/4 cup melted butter
    I also add:
    1/2 cup sour cream
    1 tsp vanilla
    1/2 tsp almond extract
    3 cups sifted flour
    1 teaspoon salt
    4 teaspoons baking powder
2 cups blueberries (fresh or frozen without syrup)

    Recipe

Beat together the eggs and sugar, until the mixture loses its granular consistency.

    Add milk and melted butter.

Sift together flour, salt, baking powder.

Add liquid ingredients, mix to combine.

Toss blueberries in a little flour to keep them from sinking to the bottom of the bread.

Add them to the batter and pour into 2 regular well-greased loaf pans.

Preheat the oven to 350 degrees and bake from 30-40 minutes or until cake tester comes out clean in the center.

    Serve warm with butter.

Note: See "Apple Crunch Pie" recipe for a great streusel topping for this.

    Freezes very well.
