    Best Banana Bread

    Recipe Introduction

    This banana bread has all the best things - perfectly spiced, super moist, and the best flavor and texture. You can increase or decrease the spices to suit your taste.

    List of Ingredients

    3 cups flour
    2 tsp pumpkin pie spice
    ¼ tsp nutmeg
    ¼ tsp cloves
    ½ tsp ginger
    1 tsp. salt
    1 1/2 tsp. baking powder
    1 1/2 tsp. baking soda
    4 very ripe bananas
    3/4 cup white sugar
    3/4 cup brown sugar
    3 Tbsp. vegetable oil
    3 eggs
    2 tsp. vanilla
    ¾ cup orange juice
    1/2 cup sour cream
    1-½ cups chopped pecans (optional)

    Recipe

    Sift together the dry ingredients; set aside.

    In a mixing bowl, mix/smash the bananas until smooth and creamy. Add the remaining ingredients (sugars, oil, eggs, vanilla, orange juice and sour cream); mix on medium speed until well blended. Fold in the dry ingredients half at a time, mixing on low speed just until blended. Use a rubber spatula to scrape down the bowl, and then fold in the chopped nuts.

    Grease two 9”x5” loaf pans with cooking spray. Divide batter evenly. Bake for 45-55 minutes, checking after 40 minutes with long wooden pick. Bread is done when pick comes out nearly clean but slightly moist. Do not over-bake or bottom will be too brown and bread will be dry. Cool in pans for 15 minutes, remove to wire rack and continue to cool. Wrap tightly in plastic when cool. Bread will be moister the next day. No need to refrigerate.
