    Cowboy Cookies

    My kitchen

    Recipe Introduction

This cookie is a result of a couple different recipes that I combined, so I could have all the good stuff in one cookie!

    List of Ingredients

1 cup shortening (butter flavor Crisco)
    1/2 cup granulated sugar
    1/2 cup brown sugar
1 rounded tablespoon of French Vanilla cappuccino powder
    2 eggs
    2 tsp. vanilla extract
    2 cups all-purpose flour
    1 tsp. baking soda
    1 tsp. salt
2 cups of Frosted Flakes cereal, crushed
2 cups of Cap’n Crunch cereal, crushed
    1 cup shredded coconut
1 cup semi sweet chocolate chips
    1 cup milk chocolate chips

    Recipe

    Preheat oven to 375.

Using an electric mixer, cream shortening and sugars WELL, beating til very light and fluffy. Add cappuccino powder, eggs and vanilla; beat well.

Combine flour, salt and soda; add to creamed mixture, mixing well.

Add remaining ingredients, mixing on low speed just until folded in (try to be gentle at this stage!).

Drop dough onto parchment lined cookie sheet using a cookie dough scoop or rounded tablespoon, a dozen at a time. Bake at 375 degrees for 10 to 12 minutes or until lightly browned.

Remove cookies from the baking sheet immediately and cool on wire racks.
