    Muffin Top Blueberry Cobbler

    Source of Recipe

    Posted by jcz04

    List of Ingredients

    1/2 cup unsalted butter
    1 cup of all-purpose flour
    1-1/2 teaspoons baking powder
    1/2 teaspoon salt
    1 cup of whole milk
    1 cup of sugar
    1 tablespoon of sugar
    1 teaspoon vanilla extract
    2 cups of blueberries

    Recipe

Heat the oven to 350ºF. Place the butter in a 9x13 or (11x7x2-inch) ovenproof dish or an 8" cast iron skillet or 9-inch square baking dish. Place in the oven.

Combine the flour, baking powder and salt. Add the milk and the 1 cup of sugar. Add the vanilla and stir to combine.

In a second bowl combine the blueberries and the 1 tablespoon of sugar. Remove the hot dish from the oven. Pour the batter into the hot dish and sprinkle with the blueberries. (I then sprinkled batter with cinncamon/sugar.) Return to the oven. Bake until the top is brown and the batter has risen up and around the fruit about 30 minutes.
