Salsa Meatloaf

Recipe Introduction
This recipe was adapted from Patti LaBelle�s cookbook. What makes this one different and soooo good is the combination of all the different onions and garlic. If you want to add a little more kick to this meatloaf, add a teaspoon (or more) of chili powder to the recipe.
List of Ingredients
1 � to 2 lbs lean ground beef
1 lb bulk sausage
� c thick bottled salsa
� c chopped onion
� c chopped green pepper (optional, if you don�t like �em, leave �em out)
� c chopped green onion (green and white parts)
� c finely chopped shallots
1 clove of garlic, minced (1/2 tsp chopped), or more if you like
2 slices of bread, torn into very small pieces, soaked in enough milk to cover
2 eggs
1/2 c dried seasoned breadcrumbs (I've also use crushed cheez crackers instead)
1 tsp seasoning salt (Lowry's or your favorite)
� tsp pepper
1/2 teaspoon of Mrs Dash original seasoning blend
Recipe
In a large bowl, combine everything (using your hands works best); mix well but do not over-handle the meat � over-handling will make a tough meatloaf. Shape into a loaf and place in a 9 x 13 casserole dish (NOT a loaf pan). Bake at 350 for about an hour, or until a meat thermometer reads 165 degrees when inserted in the center. Let rest for 5-10 minutes before slicing and serving.
