    Ultimate BBQ Chicken Burger

    1 lb. monterey pepper jack cheese
    1 lb. ground chicken
    1 large egg, lightly beaten
    2 green onions, chopped
    1/2 cup diced onions
    1/4 cup grated parmesan cheese
    2 tbsp. dry bread crumbs
    2 tbsp. chopped fresh herbs
    3 tbsp. King of the Q Bonedust BBQ Seasoning
    6 boneless skinless chicken breasts (each 4 oz.)
    1 to 2 tbsp. vegetable oil
    1/2 cup King of the Q Smokin' Beer BBQ Sauce
    6 hamburger buns
    12 slices bacon, cooked crisp
    1 to 2 tomatoes, sliced
    1 red onion, sliced
    6 leaves green leaf lettuce

    Cut half the monterey pepper jack cheese into 1/4-inch cubes. Spread cheese on a tray so the cubes are not touching and freeze for 1 hour. Grate remaining pepper jack cheese and set aside.

    In a bowl, combine ground chicken, egg, green onions, onions, parmesan, bread crumbs, herbs and 1 tbsp. King of the Q Bonedust BBQ Seasoning. Mix well. Add the frozen cheese and mix well.

    Using a 3-oz. ice cream scoop (or your hands); scoop the chicken mixture into six balls. Pat the balls to press out excess air. Press each ball into a patty, about 1/2-inch thick. Place on a tray lined with wax paper and freeze for 15 minutes.

    Meanwhile, using a sharp knife, cut each chicken breast down one side from top to bottom, cutting almost to the edge but not all the way through. Splay out the meat to butterfly. Place chicken breasts, one at a time, between two sheets of plastic wrap and, using a meat mallet or rolling pin, gently pound the meat to a uniform 1/2-inch thickness, keeping the breast intact. Season both sides of the chicken with the remaining BBQ seasoning. Wrap burgers in plastic wrap and refridgerate for 1 hour.

    Preheat grill to high, (about 500 degrees F).

    Brush chicken burgers with oil. Grill for 1 to 2 minutes per side to sear.

    Reduce heat to low. Close the lid and grill for 10 to 15 minutes, basting frequently with King of the Q Smokn' Beer BBQ Sauce, until the burgers are fully cooked.

    Place burgers on the bun bottoms and top with 2 slices of bacon, 1/4 cup of grated monterey pepper jack cheese, sliced tomato, sliced red onion and green leafy lettuce.

    Serves 6.
