    Baked phyllo lamb triangles

    List of Ingredients

    ¾ lb. ground lamb
    1 pinch crushed red pepper
    1 onion, finely chopped
    2 T fresh parsley
    2 garlic cloves, minced
    2 T fresh coriander
    2 T butter
    1 egg
    2 tsp cumin
    ½ t ginger
    ½ t paprika
    ½ t cinnamon
    1 pinch saffron threads, soaked in a little water
    ½ package phyllo dough
    melted butter

    Recipe



    1. Saute lamb until pink. Drain fat.
    2. Add onion, garlic, cumin, ginger, paprika, cinnamon crushed red pepper, saffron, parsley, coriander to meat in a frying pan and cook over a medium heat, uncovered and stirring occasionally.
    3. Cook for about 6 minutes, or until the moisture has partially cooked
    4. Add the egg and continue to stir for about 1 minute, or until it is cooked.
    5. Preheat the oven to 375F.
    6. Cut 3 inch wide strips of phyllo dough.
    7. Brush 1 strip with melted butter and place another one on top. Brush with the butter and place a heaped teaspoon of filling at one end.
    8. Fold the corner in to make a triangle. Fold along the line as you would in folding a flag. Repeat with the remaining phyllo and filling.
    9. Place on a baking sheet and bake for about 15 minutes, until golden.
    10. Serve immediately, warm or at room temperature.
