    Serves 4-6

    List of Ingredients




    6 pieces of skinless, boneless chicken pieces (breasts/thigh)
    1 fresh lime juice
    1 tbsp vegetable or canola oil
    ¼ teaspoon of salt
    ¼ teaspoon of crushed pepper
    ¼ teaspoon of chilli powder
    2 to 3 tablespoons of unsalted butter (or margarine)
    2 onions finely chopped
    ¼ teaspoon of cinnamon
    2 teaspoons of crushed garlic
    2 teaspoons of crushed ginger
    ½ teaspoon of ground turmeric
    1 to 2 teaspoons of chilli powder
    1 tablespoon of ground coriander
    ¼ to ½ cup ground almonds (Optional)
    8 oz can of whole peeled tomatoes with juice
    1 tablespoon of tomato paste
    ½tbsp garam masala
    ½ teaspoon salt
    2/3 Cup light cream
    2 bay leaves


    Recipe




    Ingredients for marinade:
    1 fresh lime juice
    1 tbsp vegetable or canola oil
    ¼ teaspoon of salt
    ¼ teaspoon of crushed pepper
    ¼ teaspoon of chilli powder
    Cut chicken breasts/thighs into small cubes
    Marinate them for at least one hour. (You can do this overnight for better results.)

    • Heat butter and oil in a large saucepan until the butter melts and becomes frothy.
    • Add onions and the cinnamon to the pan and sauté until the onions are soft
    • Reduce heat
    • Add crushed garlic and ginger and sauté for a minute or two
    • Then add the turmeric powder, chilli powder, garam masala and coriander, and sauté over a medium heat for 1 minute
    • Pour in the ground almonds, tomatoes and tomato paste. Cook for 6 minutes and let it simmer for another 3 to 4 minutes.
    • Add marinated chicken and stir-fry for about 7 minutes
    • Add water and bay leaves and cook over low heat for about 20 minutes, stirring occasionally.
    • Add cream and cook for another 20 minutes until the gravy is reduced to half and chicken is done. Do not forget to stir occasionally.
    • Taste. Add salt if needed


    Garnish with chopped cilantro and 1 or 2 chopped fresh green chillies.

    Serve it with rice or flat bread.
