Enchilada Pie
4 med. potatoes
1 lb. ground beef
8 corn tortillas
1 can cream of chicken soup
1 can mild enchilada sauce
Grated cheddar cheese Recipe
Brown beef.
Peel, slice and fry potatoes. When potatoes are almost done, put in with browned beef.
Mix soup and enchilada saucetogether in a bowl. Dunk tortillas in soup mixture.
Cover the bottom of ungreased baking dish with dipped tortillas, then layer of meat and potatoes and then with cheese. Repeat layers ending with the cheese.
Bake at 350 degrees for 20 minutes or until heated
