    Blueberry popsicles are delightful summer treats. That’s why we’re glad today is National Blueberry Popsicle Day! Popsicles were invented in 1905 by eleven-year-old Frank Epperson. He accidentally left a stirring stick in a fruit-flavored drink on his porch one winter night. In the morning, it was frozen solid and the icy treat we know and love was first created. He first named this delight the "Epsicle.” This name was changed eighteen years later. By 1965, 34 different flavors of popsicles were being produced, including blueberry. To celebrate National Blueberry Popsicle Day, purchase a pack of blueberry popsicles or make your own. Punch Bowl

    Blueberry Bliss Popsicle


    2 cups blueberries
    2 cups water
    1/2 cup sugar
    1 teaspoon lemon juice
    9 small paper cups
    9 wooden craft sticks

    Recipe



    1. Place all of the ingredients in a large bowl.

    2. Mash everything together with a potato masher, squeezing as much out of the blueberries as you can.

    3. Place a strainer over another bowl and dump the blueberry mash into the strainer. Use the back of a large slotted spoon to push through the strainer as much juice as possible.

    4. Throw away the blueberry skins left in the strainer.

    5. Pour the contents of the bowl into a pourable measuring cup.

    6. Line up the cups and pour the blueberry mixture into each one. Fill them up about 3/4 of the way full.

    7. Place a wooden craft stick in each cup.

    8. Put the cups in the freezer for about 4 hours or until frozen.

    9. Peel off the cup from the frozen pop and enjoy!
    Makes: 9 small popsicles

    Prep Time: 15 minutes with little helpers
    Freeze Time: 4-5 hours
