    Basic Pumpkin Cake from Heidi


    4 eggs
    1 2/3 c. sugar
    1 c. cooking oil
    1 can pumpkin -- (16 oz.)
    2 c. flour
    2 tsp. baking powder
    2 tsp. cinnamon
    1 tsp. salt

    Cream cheese icing.

    3 oz. cream cheese
    1 tsp. vanilla
    1/4 c. butter
    2 c. powdered sugar
    1 tsp. baking soda

    In a large mixing bowl, beat together eggs, sugar, oil, and pumpkin until light and fluffy. Stir together flour, baking powder, cinnamon, salt, and baking soda. Add to pumpkin mixture and mix thoroughly. Spread batter in ungreased baking pan. Bake in preheated 350 degree oven for 25 to 30 min. Cool. Frost with cream cheese frosting recipe. Cream Cheese Frosting: Beat in small mixer bowl until light and fluffy.
