    Cereal Crunch Coffee Cake


    1/3 cup margarine, tub style, divided
    1/4 cup + 2 tbsp. brown sugar, packed
    1-1/2 oz. cereal nuggets
    1/2 tsp. each cinnamon, ground nutmeg
    1 cup + 2 tbsp. all-purpose flour
    1 cup each raisins, skim milk
    1-1/2 tsp. baking powder
    1/4 tsp. salt
    1 large egg
    3 oz. crushed wheat flakes

    Recipe




    Heat oven to 375º F (185º C).

    Spray an 8x8" pan with nonstick cooking spray; set aside.

    Topping:

    In small saucepan, melt 1 tsp. margarine. Remove from heat, stir in 2 tbsp. sugar, cereal and cinnamon; set aside.

    On wax paper, combine flour, raisins, baking powder, salt and nutmeg; set aside.

    In a small bowl with an electric mixer on medium speed, beat remaining margarine and sugar until fluffy. Add egg and beat until blended. Beat in milk and wheat flakes until combined. Add dry ingredients to bowl, stirring just until combined.

    Spoon batter into pan.

    Sprinkle topping over batter, pressing gently into batter.

    Bake 25 - 30 minutes, until golden brown and toothpick inserted in center comes out clean. Cool 10 minutes.

    Makes 9 servings.
