    Moist Fig Cake from Hel


    2 cups all-purpose flour
    1-1/2 cups light brown sugar, packed
    2 tsp. baking soda
    1/2 tsp. salt
    1 tsp. each ground cinnamon, ground nutmeg
    1/2 tsp. ground allspice
    4 oz. butter or margarine, melted
    1/2 cup vegetable oil
    3 eggs, beaten
    1 cup each buttermilk, fig preserves, chopped pecans
    2 tsp. vanilla extract

    Recipe





    Heat oven to 325°F (165ºC).

    Grease and flour a 12-cup Bundt or tube cake pan (or spray with non-stick spray).

    Combine flour, sugar, baking soda, salt and spices in a large mixing bowl; add butter and oil; beat well. Add eggs and beat until well blended. Beat in buttermilk and vanilla. Stir in preserves and pecans.

    Pour into baking pan. Bake 55 - 60 minutes, until a toothpick inserted into cake comes out clean.

    Makes 8-10 servings.
