    Candy Apple Cupcakes


    Cupcakes:

    3 cups flour
    2 teaspoons baking soda
    1 teaspoon salt
    1 1/2 cups apple butter
    3/4 cup brown sugar
    3/4 cup sugar
    2/3 cup melted butter
    1/2 cup sour cream
    2 eggs

    Frosting:

    40 caramel candies, unwrapped
    6 tablespoons heavy whipping cream
    15 candy sticks, halved

    Cupcakes:

    Heat oven to 350°F. Line a standard muffin pan with paper liners. Mix together flour, baking soda and salt. Beat together apple butter, sugars, butter, sour cream and eggs till just combined. Gradually beat in flour mixture till well blended and smooth. Fill prepared muffin cups half full.

    Bake 25-30 minutes till toothpick inserted in centers comes out clean. Cool in pans on racks 5 minutes. Remove cupcakes to racks to cool completely.

    Frosting:

    Heat caramels and cream together in heavy saucepan over low heat, stirring frequently till melted. Cool about 5 minutes. Working carefully and quickly, while mixture is still warm and fluid, spread top of each cupcake with about 2 teaspoons of caramel mixture. Mixture will be sticky. If it gets too stiff, reheat just enough to make spreadable again. If mixture is too warm, it will not stick to cupcake. Insert candy stick in center of each cupcake.
