Zucchini Orange Cookies

Zucchini Orange Cookies


3/4 C Butter, at room temp
1 1/2 C Sugar
1 Egg
1 tsp Vanilla
1 1/2 C Shredded Zucchini
2 1/2 C All-Purpose Flour
2 tsp Baking Powder
2 tsp Grated Orange Peel
1/2 tsp Salt
2 Tbls Frozen Orange Juice Concentrate, thawed and undiluted
3/4 C Flaked Coconut
3/4 C Chopped Almonds or Walnuts


Recipe





Beat butter and sugar together until creamy. Beat in egg, vanilla and zucchini. In a seperate bowl, stir together flour, baking powder, orange peel and salt. Add to creamed mixture. Beat well. Add orange tyrate, coconut and nuts. Mix well. Drop by rounded teaspoonfuls onto greased baking sheets. Bake iin 375 degees oven for 8 to 10 minutes, or until lightly browned. Cool on wire racks.

Makes about 4 dozen.
