Heart Warming Pumpkin Crisp
Crust Ingredients:
1 cup sifted, all-purpose flour
1/2 cup brown sugar
1/2 cup butter or margarine
Filling Ingredients:
2 cups canned pumpkin
1 (12oz) can evaporated milk
2 eggs
3/4 cup granulated sugar
1 TB melted butter or margarine
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/2 tsp salt
Topping Ingredients:
2 TB butter or margarine
1/2 cup firmly packed brown sugar
1/2 cup chopped walnuts
Recipe
Preheat oven to 350 degrees. In a large bowl, combine flour, oats, and brown sugar. With a pastry blender, cut in butter or margarine until mixture resembles coarse crumbs. Press into bottom of an ungreased 9x13x2" baking dish. Bake 15 minutes.
In a large bowl, combine pumpkin, evaporated milk, eggs, granulated sugar, melted butter or margarine, cinnamon, ground cloves, ground nutmeg, and salt. Stir well. Pour mixture over crust and return to oven for 20 minutes.
In a small bowl, cream butter or margarine with brown sugar. Stir in chopped walnuts. Sprinkle mixture over top of dessert and return to oven for 15 minutes. Cool. Serve with whipped cream.
Makes about 12 servings.
