    Shoofly Pie from David


    1 cup flour
    2/3 cup firmly-packed light brown sugar
    1 tbsp vegetable shortening
    1 egg, slightly beaten
    1 cup molasses
    1 cup boiling water, divided
    1 tsp baking soda
    9 inch unbaked pie shell

    Recipe




    Preheat the oven to 425 F. In a medium bowl, stir together the flour and sugar. Using 2 forks, cut in the shortening until the mixture forms coarse crumbs. Remove 1/2 cup of the crumb mixture. Set aside. To the larger portion of the crumb mixture in a bowl, add the slightly beaten egg, molasses, and 3/4 cup boiling water. Stir until well blended. In a small heat proof cup, stir the remaining 1/4 cup boiling water and the baking soda until the baking soda is dissolved. Add to the molasses-egg mixture. Pour the mixture into the unbaked pie shell. Sprinkle with the reserved crumbs. Bake 15 minutes, then reduce the heat to 350 F and bake 40-45 minutes longer until set in the center.
