Tomatillo Salsa
2# chopped tomatillos or tomatoes
1/2# chopped red onions
8-10 clove garlic, chopped
4 jalapeno peppers - (with seeds and veins removed)
1/2 cup chopped cilantro or more
1/4 teaspoons cumin
2 Tablespoons lime juice
2 Tablespoons Celtic salt
1/4 cup whey or plain yogurt
Recipe
Mix altogether and put in canning jars leaving at least 1 inch
headspace. Leave on counter for 2 days before refrigerating.
Makes approx. 1 1/2 quarts
